Story
The Aurora is one of the most elegant and nuanced coffees we’ve brought into the lineup. Produced by Juan Peña in the Yunguilla Valley, this Typica Mejorado showcases the refined floral sweetness and layered complexity that has made Ecuador one of the most exciting origins in specialty coffee.
The cup is delicate yet deeply expressive, opening with tropical sweetness and soft florals before evolving into notes of guava jelly, sweet custard, lemongrass, and black tea. Its silky texture and long, refined finish create a profile that feels vibrant, luminous, and composed.
This release highlights the beauty of low intervention processing — allowing the variety, terroir, and meticulous production to speak with exceptional clarity.
The Producer
Juan Peña is widely recognized as one of Ecuador’s most influential coffee producers. With a background in agronomy and years of research-driven innovation, Peña has helped elevate Ecuador’s global reputation for ultra high-end specialty coffee.
His farm in the Yunguilla Valley sits within the Choco Andean cloud forest, where stable temperatures, Pacific-facing slopes, and nutrient-rich soils create ideal growing conditions for slow cherry maturation and concentrated flavor development.
Known for precision and consistency, Peña utilizes advanced quality control systems that monitor everything from soil nutrition to drying conditions, producing coffees regularly featured on competition stages around the world.
Process
This coffee underwent a low intervention washed process designed to preserve the clarity and character of the Typica Mejorado variety. Cherries are selectively harvested, floated and density sorted before depulping and controlled fermentation.
Following washing, the coffee is carefully dried for 9-18 days in automated drying rooms that maintain stable moisture content and water activity levels, resulting in an exceptionally clean and transparent cup profile.
In the Cup
Bright florals and citrus aromatics open the experience before layered notes of guava jelly, green mango, sweet custard, and black tea emerge throughout the cup. As it cools, subtle herbal and citrus blossom characteristics begin to appear alongside a soft, structured sweetness.
The body is silky and textured with a lingering finish that continues to evolve long after each sip.
Brew Tips
Best suited for pour over
Flat bottom brewers help emphasize sweetness and florals
Use a coarser grind to maintain clarity and avoid over extraction
Lower extraction highlights citrus, custard, and floral notes
