Grown at Santa Mónica Farm, this Castillo lot undergoes a carefully controlled anaerobic honey fermentation with ripe strawberries and wine yeast, creating a cup with remarkable depth, sweetness, and clarity.

The strawberries contribute bright berry sweetness while the wine yeast enhances fermentation, developing elegant fruit complexity and subtle wine-like character. The result is a silky, expressive coffee with notes of ripe strawberries, chocolate, juicy citrus, and caramel sweetness.

The Producer

Jairo Arcila is a third-generation coffee producer from Quindío, Colombia. After spending more than 40 years as a mill manager for one of Colombia's largest coffee exporters, he dedicated himself to producing exceptional specialty coffee across his family of farms.

Working alongside his sons, Carlos and Felipe Arcila of Cofinet, Jairo has embraced innovative processing methods and exotic varieties, creating some of Colombia's most sought-after coffees while supporting his local community through sustainable farming and seasonal employment.


The Process

Only the ripest Castillo cherries are hand-picked before being transported to Cofinet's La Pradera processing center.

After careful sorting, the cherries undergo a 72-hour dry anaerobic honey fermentation with ripe strawberries and wine yeast. The strawberries impart vibrant berry sweetness while the wine yeast promotes a more complex fermentation, producing aromatic compounds that enhance clarity, sweetness, and subtle wine-like depth.

Following fermentation, the cherries are pulped while retaining their sticky honey mucilage before being slowly dried for approximately 11 days until reaching the ideal moisture content. The result is a clean, layered, and intensely aromatic cup.
