Description - The Pink Borbon Punch starts with a 12-hour pre-fermentation in plastic tanks, followed by a 24-hour anaerobic fermentation, which enhances its fruity flavors.
The cherries are then dried in a mechanical silo for 4 days, followed by 20 days of sun-drying on raised beds to reach the right moisture level.
After drying, the beans are stored in GrainPro bags for 30 days, allowing the flavors to mature. The final cup features balanced notes of apple, blackberry, blueberry, malic acid, and plum, highlighting the distinct characteristics of the Pink Bourbon variety.
