The Story
Some coffees explode with flavor. This one goes supernova.
Sourced from coffee producers across Huila, Tolima, and Caldas, this innovative Colombian coffee is processed at El Vergel Estate, where traditional honey processing meets experimental fermentation.
The coffee begins with carefully selected ripe cherries before undergoing pre-fermentation and fermentation in cherry. After depulping, the coffee is anaerobically co-fermented for five days with its mucilage, yeast, and passion fruit, intensifying its natural fruit character.
The result is a wildly juicy cup bursting with passion fruit and pomegranate, followed by bright citrus acidity and a layer of brown sugar sweetness.

The Producer
This coffee is produced by a network of Colombian coffee farmers from Tolima, Huila, and Caldas, with the coffee processed at El Vergel Estate.
El Vergel has become known for its innovative approach to coffee processing, working with producers to explore fermentation techniques that can create new expressions from Colombian coffee.
Their work combines carefully selected coffee cherries with controlled fermentation and fruit-driven processing to create coffees that push well beyond traditional flavor profiles.
In the Cup
The first sip hits with an unmistakable burst of passion fruit, bringing a vibrant tropical sweetness and lively acidity.
As the cup opens, pomegranate and bright citrus begin to emerge, giving the coffee a juicy, almost sparkling character.
As it cools, the acidity softens and a smooth brown sugar sweetness rounds everything out, leaving a clean and lingering tropical finish.

We'd recommend a pour-over or Hario Switch to bring out the coffee's tropical fruit character and vibrant acidity.
A brew temperature around 198–201°F (92–94°C) with a medium grind should help emphasize the passion fruit and pomegranate while allowing the brown sugar sweetness to develop as the coffee cools.
