Description - Finca Nuevo Mexico's precise control of fermentation and drying results in coffee with exceptional sweetness and body. The process begins with rinsing the cherries in water to remove dirt and separate floaters. The cherries are then placed in 9000-liter tanks and kept in an oxygen-free environment for 88 hours. After pulping, they go through an Ecowasher to remove most of the mucilage. Next, a Centriflux machine removes most of the surface water. Finally, the coffee is dried on traditional patios, turned frequently to ensure even drying over 6 to 8 days, depending on the weather.
