Story
From the innovative mind of Elkin Guzmán at El Mirador in Huila, this Catiope lot embodies precision and creativity. The farm spans 31 hectares in the village of El Portal, cultivating rare varieties like Caturra, Tabi, Orange Bourbon, and Mokka. With over 70 years of family heritage, Elkin’s experimental approach to post-harvest processing has redefined Colombian coffee quality.

This Catiope undergoes a 330-hour co-fermentation with a handcrafted mother culture made from lactobacillus, red fruit juice, and aromatic herbs. The process amplifies the coffee’s fruit character while maintaining balance and clarity. After slow drying to a precise 10.5–11% moisture, the result is a lively and expressive cup that captures the essence of spring.

Expect layers of juicy stone fruit, passion fruit, and ripe cherry, balanced by a twist of lemon brightness and a clean, floral finish.
