Located in the village of El Portal, El Mirador is a 31-hectare farm growing unique varieties like Caturra, Tabi, Catiope, Orange Bourbon, and Mokka. Elkin Guzman, a second-generation coffee producer with over 70 years of family heritage in coffee, is known for his innovative post-harvest methods. Each lot is carefully processed using tailored techniques like maceration, lactic fermentation, and natural hydro honey to highlight the coffee’s full potential. Catiope, a standout variety on the farm, offers exceptional cup quality and is a cross between Caturra and Ethiopian lines.

Process: Extended Co-Fermentation with Fruit Culture
This coffee undergoes a 330-hour co-fermentation using a handcrafted mother culture made from lactobacillus, saccharomyces cerevisiae, red fruit juice, and aromatic herbs. After an initial 60-hour fermentation, the culture is added to the cherries to intensify fruit character while maintaining clarity and balance. Controlled sugar and pH levels preserve the coffee’s core profile. Post-fermentation, the coffee is slowly dried and moved regularly to reach a precise moisture content of 10.5–11%.

This Catiope spring harvest is a washed co-ferment that bursts with juicy stone fruit, vibrant passion fruit, and ripe cherry. Balanced by a twist of lemon brightness, the cup finishes clean and floral. A lively, fruit-forward profile that captures the essence of spring in every sip.
