Story
Produced by Edwin Noreña at Finca Campo Hermoso, this lot showcases his signature high-intervention processing style. Using a classic Caturra variety, the coffee undergoes multiple controlled fermentations, including a second anaerobic stage infused with coffee cherry must, glucose, and raspberries.
The result is a dialed-in, fruit-driven profile that leans heavily into deep red fruit. More syrupy and macerated than fresh, this is a bold expression built with intention and precision.

Process
Carbonic natural. Double-stage anaerobic fermentation with recirculated coffee cherry must, glucose, and raspberry infusion. Dried on raised beds.

In the Cup
Heavy red fruit intensity up front with black cherry and cherry cola leading. The body is dense and syrupy with candy-like sweetness. A subtle herbal note adds structure and keeps the profile balanced.

Brew Tips
Best on pour over. Use flat bottom brewers with a slightly finer grind to slow extraction and emphasize body and sweetness.
