Story
Produced by Edwin Noreña at Finca Campo Hermoso, this lot is a high-intervention expression of his signature fermentation style. Known as El Alquimista, Edwin carefully layers multiple controlled fermentations to build a precise and intentional flavor profile.

This microlot undergoes a series of anaerobic and carbonic fermentations, followed by a final co-fermentation using coffee cherry must, glucose, and both fresh and dried apple components. The result is a vibrant, candy-like cup that pushes the boundaries of what coffee can taste like.


Process
Carbonic honey process. Triple-stage fermentation including anaerobic and carbonic maceration phases, followed by a co-fermentation with recirculated coffee cherry must, glucose, and apple infusion. Dried on raised beds.


In the Cup
Bright, juicy, and unmistakably expressive. Green apple leads with a bold candy-like intensity, reminiscent of a green apple jolly rancher. Layers of apple cider and mojito bring freshness, while caramel sweetness and a light green tea note add structure and balance. High energy, high clarity, and unapologetically fruit-forward.


Brew Tips
Best on pour over. Use a slightly higher dose with a faster brew time to highlight sweetness and clarity. Conical brewers will emphasize a cleaner profile, while flat-bottom brewers will increase body and density.
