The Story

This coffee is part of Edwin Noreña’s innovative co-fermentation projects, where he pushes the boundaries of flavor while honoring Colombian terroir. Tropical, juicy, and complex—this lot shines with passionfruit-like vibrancy, a silky honey body, and sparkling acidity.


The Process

Edwin’s meticulous approach highlights the fruit character:

  1. Harvest – Cherries picked at optimal ripeness.

  2. Fermentation – A carefully controlled co-fermentation with fresh watermelon enhances both aroma and flavor.

  3. Drying – Finished as a honey process, with extended drying on raised beds to lock in sweetness and structure.

  4. Stabilization – Rested and selected to ensure a clean, vibrant cup.


In the Cup

The result is a wildly expressive coffee, layered with tropical fruit, sweet honey notes, and a refreshing acidity. A true showcase of experimental Colombian processing.


Brewing Suggestions

Best enjoyed as a pour-over to highlight its layered fruit character, though it also shines as a vibrant, fruit-forward espresso.
