Produced by smallholder farmers in Guji in collaboration with Tracon Coffee, this lot showcases a modern approach to Ethiopian coffee. It’s a carbonic maceration that feels intentional and controlled, bringing out bold fruit while maintaining clarity and structure.
Process
Carbonic maceration, fermenting the coffee in a sealed, oxygen-limited environment to enhance aromatics and deepen fruit complexity.
In the Cup
Vibrant and layered. Blueberry and ripe peach up front, followed by a wine-like depth and a bright, ferment-driven acidity. Expressive but clean, with a structured finish that keeps everything in balance.
Brew Tips
Best as pour-over or immersion. Use a slightly coarser grind and shorter extraction to keep the cup lively and highlight the fruit.
