Description - The process for this coffee starts with cherries harvested with a brix level above 24° are soaked in water for 4 hours to clean their exterior, remove floaters, and hydrate the fruit. Following this, the cherries undergo an initial 12-hour anoxic fermentation with fresh watermelon and coffee mossto. Afterward, the coffee is depulped, leaving 50% of the mucilage intact, and then subjected to a second 12-hour anoxic fermentation with watermelon and mossto. Once this process is complete, the coffee is dried on raised beds for 26 days using the ‘honey’ method.
