Description
- Edwin’s IPA processing for this lot involves three fermentation steps followed by raised bed drying. First, the cherries are pre-fermented for 32 hours right after picking to soften the fruit and peak the sugars. Next, the cherries are depulped, and the parchment ferments in an open tank for another 32 hours. Then, the parchment is moved to an oxygen-deprived tank, mixed with sugary runoff from the initial fermentation and galaxy hops, and ferments for another 32 hours. After all fermentation stages, the coffee is sun-dried on raised beds for 10-15 days.

Incredible

I’ll preface this, I would not drink this coffee every day and that’s okay. I think like most people, I bought this coffee to examine the accuracy of the description to the taste and to taste my first co-ferment with hops.

What an amazing sensation. It’s a bit to wild and chaotic on the palette for my everyday coffee wants, but i didn’t buy it wanting that out of it. It really tastes like a citrusy amber ale. It’s a controlled chaos that delights and makes me ponder. As a roaster, I’ve not been given the opportunity to work with co-fermented coffee yet and in fact this was my first taste of co-fermented coffee. I was apprehensive only for the fact that I thought maybe I should start with a different co-ferment as my introduction to this process, but I was not at all disappointed. It’s a fantastic coffee. It’s funky; it’s got bite; it’s exactly what I was hoping to taste. 5/5

If you’re looking for something unique this is right up your alley. It's well balanced and floral without being too funky. Great intro to co-fermented coffees.
