Description - Edwin’s IPA processing for this lot involves three fermentation steps followed by raised bed drying. First, the cherries are pre-fermented for 32 hours right after picking to soften the fruit and peak the sugars. Next, the cherries are depulped, and the parchment ferments in an open tank for another 32 hours. Then, the parchment is moved to an oxygen-deprived tank, mixed with sugary runoff from the initial fermentation and galaxy hops, and ferments for another 32 hours. After all fermentation stages, the coffee is sun-dried on raised beds for 10-15 days.
