Description - The coffee profile process starts with harvesting ripe cherries. After ozone disinfection, cherries undergo a 72-hour anaerobic fermentation in water with Saccharomyces cerevisiae. Dehumidification preserves flavor, prevents over-oxidation and halts metabolic processes. Stabilization occurs in cool storage, followed by meticulous selection and threshing based on quality standards.
This coffee has an intense fragrance when brewing, has a strong and fruity flavor profile with an extended aftertaste. This coffee is great hot or iced.

I would highly recommend this coffee to those seeking a change from the usual coffee flavors. It was a refreshing departure from the more traditional coffee profiles. I opted for a pour-over brewing method using a V60 dripper.
