Description - Noreña harvested this coffee from Gesha trees, employing a brix meter for selective harvesting. Subsequently, the cherries are submerged in water for approximately an hour. The primary fermentation spans 72 hours and occurs within whole cherries, sealed in a tank. After pulping, the coffee undergoes a secondary fermentation of 96 hours, incorporating mossto from the initial fermentation (Mossto, or "must," here refers to the runoff from a prior fermentation batch). This mossto is infused with Galaxy Hops and is recirculated every twenty-four hours for a total of four days during secondary maceration. The resulting heavily fermented "honey" coffee is then transferred to elevated beds for a 22-day drying period, followed by controlled humidity stabilization in a warehouse for an additional 8 days.
